Different flour types have different densities and protein contents, which affects how much they weigh per cup. This is why professional bakers always weigh flour rather than using volume measurements.
The spoon-and-level method is crucial for accurate flour measurements:
Scooping directly from the bag can add 20-30% more flour than the recipe intended, leading to dry, dense baked goods.
For all-purpose flour, 1 cup equals 125 grams when measured using the spoon-and-level method. However, this varies by flour type: cake flour is 114g, bread flour is 127g, and whole wheat is 120g per cup.
Measure first, then sift unless the recipe says "1 cup sifted flour" (sift first). Most modern recipes assume unsifted flour. Sifting after measuring aerates the flour for lighter cakes and removes lumps.
